easy cider rye bread

In a large ceramic bowl mix

4 cups white flour

1 cup rye flour

1 Tbsp sugar

1 Tbsp salt

1 packet or 7grms of instant yeast

whisk together dry ingredients

stir in

16 oz cider of your choice at room temp ( I use alcoholic craft cider)

6 oz water at room temp

dough will be very sticky

make sure all dry ingredients are moistened

leave dough in same bowl, drizzle a small amount of olive oil around top edge of bowl and let it run down towards dough

cover and let rise 2-12 hours

preheat oven to 475F

place a cast iron pot with lid on in oven for 20 minutes, remove pot very carefully(it will be very hot)

with a spatula slide dough into hot pot

place in oven with lid on for 30 minutes, remove lids and allow bread to brown a bit more for 10-15 min

remove pot, turn out bread onto a rack to cool for 30+ minutes
